    Stop using or buying anything in plastic containers or bags. I have reduced my use of such products, but still use them as convenience occasionally like when I volunteer at a charity event.  Water is a must especially living in Florida.  I will invest in a small water jug to take with me instead of bottled water.

    How are environmental issues like black carbon and other emissions from cooking fires or rudimentary cookstoves also human health and social justice issues? Why do these issues matter to you?

    Humans need clean air to breathe and cooking fires can cause soot and ashes, which are bad for the lungs and can lead up to health issues if constantly exposed to them. Airborne soot particulates are invisible, you may unknowingly be affected. Once soot enters your blood stream, it can cause a wide array of serious health issues, including respiratory issues, shortness of breath, bronchitis, asthma, stroke, heart attack, cancer, and premature death. We need to be aware of everything we do and how it affects others around us. Cooking fires are also dangerous and should be watched at all times. They are the number one cause of larger fires and can get out of control quickly. A well ventilated area is a must for cooking fires.

    How does knowing the difference between use by, sell by, and best by dates empower you to make better decisions?

    Knowing what the difference is between the different types of dates will help me decide if a food item should be tossed if it is past any of the dates or if it is still safe to eat.  If it is a sealed product such as canned and there are no bulges in the can itself, the food is probably still safe to eat.  However, if upon further inspection (opening the can) and the food is discolored or an odor is there, then it must be tossed to avoid getting sick.  I plan to go through my kitchen cabinets and check all dates and decide what must be thrown out or eaten in the near future.  If you are ever unsure if a food item is still good always follow - when in doubt, throw it out!

    I have always been a nature lover and I understand progress.  However, it is very disturbing to me to see so many years of forests being torn down to build a concrete structure.  The amount of buildings that already exist and are empty could be knocked down and built into something else if it is no longer valuable as it currently stands.  What does give me hope is that people are starting to realize the impact of knocking down all the habitat does to the animals and are now doing things to help the animals.  As they widen roads or build bridges, they make tunnels or fence the areas to help animals know where to cross in a safer environment.  WSP designed a safe wildlife crossing in Utah over a very busy highway.  They made it look natural for the animals so they would be comfortable crossing and less chance of having an accident with a vehicle. I hope we continue to progress to help the animals because they were here long before we were and they need protection too!

    Today as I did my 10 minute walk I decided to stop at the local grocery store to get bananas, a healthy way to get special nutrients such as potassium.  As I was about to leave, I saw the perfect reusable bag for sale and just had to pick one up.  I'm always talking about how people see too many things as disposable and this is so fitting not only for the EcoChallenge, but for Mother Earth!  Your thoughts?

      Occasionally it will be in the news about banning plastic bags, but no enforcement yet.  One of our grocery stores does have paper bags you can purchase for 10 cents (I think), but I always bring my own.  The big box store loves to use plastic bags and they waste them by putting one item in each bag.  I complain about this and tell them not to be afraid to load them up some.  They usually comply when asked.

      Where I live and where I work (not the same locality) both have passed laws adding a flat cost per bag at all stores, so it's expected that you show up with your reusable bags! I love that one, I hope you use it.

      I usually keep them in the back of my vehicle at all times. However, not all stores like to use the reusable bags because they are flimsy (or can be) and don't fit on their carousel of plastic bags.

    Living in Florida we have so much beauty around us.  This past Saturday, for the first of the season, I took a friend to the beach and we soaked up some major vitamin D.  We also walked the shoreline and picked up many beautiful and whole shells.  One shell was occupied by a hermit crab so we put him back.  We were so surprised to see him and it truly brightened our already perfect day.  It was a beautiful day to get beach therapy and renew our souls.  If you live near the beach or a lake or maybe even a park with a trail, get out and enjoy all the beauty around you.  It will renew your soul, I promise!

    Are you encouraging your coworkers to sign up? Do they know the challenge only takes a few minutes of their time and they are probably already doing some of the challenges just in their daily lives?  Send out an email to them and let them know this.  Solar panels are on the list and so many people use them for electricity and to heat up their water heater or swimming pool.  How many vegetarians or vegans do we have working at WSP?  There are more points there!  Mention a few of the challenges and encourage them to sign up.  If they participate every day awesome.  If they participate a few times, that is still more points than we have at the moment.  Every little bit does help and adds up! Let's make an impact and let's win too!

      I found out I am the only one in the challenge in the StL office. I sent out an email and got one other person to participate. Hopefully next year we will have more of an impact!

    Too much wasted food and scraps going to a landfill!  I just bought a small counter top system to start using at home.  I will spread the compost material around my yard as fertilizer.  Such a simple process and easy to get started with minimal cost!

    In your opinion, what contributes to people in North America eating more meat than any other countries? What does this say about North American values and ways of living?

    North America was raised eating animal proteins because people grew up on farms and not only had gardens but raised cattle as food and a way to support their family. These practices are still very much in use today and we have to educate people that there are plant proteins that are not only healthier, but better for the environment.  I am not a vegan or even a vegetarian, but I eat my share of vegetables and many of meals are meatless. I do eat eggs and cheese to compensate my protein intake. I believe if people learn to cook vegetables and plant proteins in a way they are more delicious, they will realize we don't have to eat meat at every meal. Infused olive oils and vinegars are not only healthy, but delicious. Roast or stir fry some veggies using these items and throw in some quinoa! Yummy!

      My daughter is a strict vegetarian. I am 99% vegetarian. The instant pot has been a lifesaver! I can make a healthy veggie meal in not time with that sucker! Pinterset has a ton of vegetarian instant pot recipes too! :-)
