When I ride my bike to work, not only to I skip the stress of traffic and congestion, even in our little town, but I feel so refreshed when I arrive at work. Yesterday, I took a longer route in order to stop by a blooming Korean spice bush. I kept that sweet smell in my mind for most of the day. These are the small blessing of riding to work, not to mention keeping our air cleaner and reduce our ghgs.

Good job on choosing recycled paper! How can you take your action a step further?

I am often asked whether it is better to print out an article (on RC paper, of course) or store it on a computer. I read a study many years ago from Carnegie Mellow University with a simple guideline: if you are going to repeatedly reference the document, then it is probably better to print. Computers and servers have changed over time, so I am going to research this question to see if there is some updated guidance.

In your opinion, what contributes to people in North America eating more meat than any other countries? What does this say about North American values and ways of living?

Meat is ingrained in so many of America's traditions. Just think of Thanksgiving turkey, Christmas and Easter ham. My husband and I are finding that as we explore and enjoy vegetarian options, it is hardest at the holidays, celebrating with multiple generations. We are fortunate that there are so many cooks and chefs, like Ottolenghi who are making cooking fun.
