    Today was beautiful outside and it was around 70 degrees. I walked around campus and counted 10+ dogs, best walk yet!

    Having a plant-rich diet is much easier than I expected it to be. I thought I would be substituting tofu or tempeh in for everything but I decided to try some new recipes instead! I made a veggie soup that will last me a few days with all of my favorite veggies and a few types of beans for some added protein. It tastes amazing and is a great substitute for a neat-based meal!

    Had a strawberry banana smoothie with flaxseeds and chia seeds for breakfast and then carrots and popcorn for lunch. Vegetarian meals are easier than they look!!
