    Today I again completed both my challenges. It got harder over the weekend while I was on a short getaway weekend. I ended up eating more than one meal containing meat on Saturday. The rest of the weekend I did well though. Today I was back to work and was able to complete both challenges easily. I have found that it is easier on days that I work than on weekends to c on complete tthetwo meatless meals a day challenge. I have been doing fairly well on the smaller portions challenge too

    Today, I was able to eat smaller portions by missing breakfast and having a small salad for lunch. For dinner, I was able to just eat a small bowl of pasta. I have noticed that I also feel better during the day when I cut my portions.
    Today I also only had meat for dinner, and just a small amount mixed into my pasta. It feels great to be able to be cutting back in meat so easily. This was the challenge that I was most worried about.

    Today I was able to eat one meal total that had meat in it. I was also able to cut my portion sizes by almost half. I'm feeling accomplished today!

    Yesterday I completed my research about hybrid and electric cars. After my research, I am very excited to buy a hybrid car. The car that I was looking at recently was the new Toyota RAV4 hybrid. Although I love the Prius, I am prefer cars that are a little higher off the ground and a little bigger. When I saw that they have a Toyota RAV4 hybrid, I became super excited to research more about it. 
    I see a nice hybrid car in my near future!!

    Reducing (or eliminating) exhaust emissions and improving public health are two benefits of green vehicles. What other motivators inspire you to consider switching to a more fuel-efficient vehicle?

    Cutting exhaust emissions and improving health are my main motivators for switching to a hybrid (fuel-efficient) car, but one of the added benefits of switching is cutting fuel costs. I looked into what gas would cost per month with a hybrid car versus what I pay now. Right now, on average, I  pay about $80 per month for gas alone on my car that gets 21mpg. If I were to get a hybrid car averaging about 40mpg, I would only need to fill up every other month. That's a huge benefit in itself. Not only that, but they now have come out with many different options for hybrid cars: SUVs, hatchbacks, sedans, coupes, etc. This is definitely something that I am interested in purchasing in the near future.

    I have been doing much better in these changes than I had expected to. I am now trying to also change my food waste. Though I am still only having one meal with meat a day, I have been looking up recipes for how to use all of the meat I eat (including bones) instead of eating bits of it and letting the rest go to waste. Bone broth is my next recipe that I will be trying.

    Yesterday was day 1. Trying to change my eating habits from meat almost every meal to only once a day is proving to be difficult already. I am planning in the mornings which meal I will eat the meat in. It is difficult, but I am excited to be changing how I live to better the environment.
