    Environmental quality has a direct effect on our health--both physical and mental. In healthy communities, everyone works together toward the common goal of maintaining a high quality environment. There is a sense of interconnectedness, and an understanding of the impact one's actions has on the whole environment. In unhealthy communities, this sense of personal responsibility and connection to the whole is missing, I believe.

    I love being able to support local farmers--and I am so thankful for the farmers who work hard to feed our communities! I am very inspired by the Durham community's food producers and restaurants who support local farms. I am also inspired by local organizations doing great work to glean produce from farms and provide fresh food to food deserts and communities in need.

    In North America, we have CAFO's which mass produce the majority of meat consumed here. Historically, the meat industry has been marketing meat (especially red meat) to us as a staple of the American diet. It says a lot about how our values are based on capitalism and greed rather than on compassion, environmental sustainability, and the health of our citizens.

    How does knowing the difference between use by, sell by, and best by dates empower you to make better decisions?

    These dates are regulated by the USDA, and manufacturers must comply in order to be able to  sell food products in retail stores in the United States. Knowing this, I employ common sense (and my senses) when selecting and consuming food. If it looks and smells good, it's usually good to eat. I take these dates as guidelines, but feel empowered to make my own decisions around my own food consumption in order to reduce waste.

    Today I spent some time learning about food waste. Here are 3 alarming facts I learned today: 25% of the world’s fresh water supply is used to grow food that is never eaten, If food waste were a country it would be the 3rd largest emitter of greenhouse gases (after China & the USA), 2.3 billion people are joining the planet by 2050 – this will require a 60-70% increase in global food production.
