    Intrigued by the Kia Soul electric vehicle coming soon. We are very happy with our compact and efficient Honda Fit, but are interested in switching to an electric vehicle. It looks like the Kia Soul is similarly compact while well-designed to be able to fit quite a bit of cargo, and it will also have features allowing for longer range.

    In terms of minimizing food waste, we definitely benefit from having a dog who loves leftovers. Although I don't have a problem judging how much to serve myself, you never know how much my young son will eat, and he's been a bit under the weather with low appetite this past week, with the dog getting that many more leftovers.

    In tracking meatless meals, I can see that where I fall away from my good intentions is when we're eating out or getting take-out--too many meat temptations/options. Cooking at home it is easy to stay meatless, as I haven't brought any meat home from the grocery store, and I also often have delicious beans on the go in the slow-cooker or saved up in the freezer to add when meals need a protein hit.

    Not an entirely successful weekend of meat-free meals. My son had 3 birthday parties to attend, all with pepperoni pizza. It's much easier staying meat-free when cooking for ourselves at home.

    Apr 3 food waste diary: Made pasta for dinner. Used up some radishes that were getting pretty old by roasting them (first time I've roasted radishes), and they were great. Trimming scraps from the cauliflower will go in the compost.

      I'll have to try grilling radishes! My daughter Zoë & I made a salad and included the whole stalk of celery, "leaves" and all - it was great! 🥗 Now it's finding a use for carrot "leaves" and remembering to buy a vegetable brush so we can stop peeling our carrots! 🥕
