hillary gilliland 4/22/2019 11:13 AMLearning about the difference between use by/ sell by/ best by dates definitely increases my awareness that many products do not need to be tossed out. They are safe, even though the date warns otherwise. Fruits and veggies that aren’t quite as attractive can still be just tasty and healthy when cooked. Also like the idea of stashing fruit in the freezer as it starts to wilt/ soften to be used in smoothies! -
REFLECTION QUESTIONFood Smaller PortionsFun fact: Your brain and stomach register feelings of fullness after about 20 minutes of eating. While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come out of eating smaller portions?
hillary gilliland 4/22/2019 11:05 AMUsing smaller plates has definitely helped reduce not only food intake at meals but also the waste being created, as portions are smaller. My family has not been thirlled about this small change but it seems to be a little easier to coax for breakfast and lunch. There definitely is an undertone in our country with food being served in mass quantities!! Am hoping that smaller portions will also help shed some of those dreaded winter pounds! -
REFLECTION QUESTIONFood Learn More about SilvopastureHad you heard of the term "silvopasture" before now? After learning more about it, what do you think is the biggest advantage of silvopasture?
hillary gilliland 4/21/2019 3:05 PMHad not heard of the term silvopasture farming before and was curious, especially living in an area that is so rich in farmland. This is interestingly not a new technique to farming. This practice benefits not only the farmers through multiple crop opportunities, but also the animals in the rich foraging available. The biggest pro of course is the reduction on carbon emmisons! -
hillary gilliland 4/06/2019 9:14 AMWe recycle at our home already but have been surprised during the challenge about how much ‘waste’ there is that could be composted. Started to research composting and have signed up for a composting class through the Master Gardiners. Def need to me educated a. bit as we live in the woods and don’t want to create a buffet for bears etc! -

hillary gilliland 4/06/2019 9:10 AMI meal plan for he week and shop accordingly. Also try hard to use things that are left from one meal in another (ie: left over broccoli from last nights dinner doubles as a topping for tomorrow nights homemade pizza. Honestly surprised by how much waste there still is from meal prep and cleaning out the fridge at the end of the week. Definitely will be more mindful of this as there are countless things we’d rather be doing with that wasted money- family summer vaca, college savings, weekly yoga classes, etc
