Kathryn Kassner 4/24/2019 4:21 PMAlthough I didn't get credit for many days of eating vegetarian, I did enjoy eating less meat and plan to continue now that the challenge is over. -
Kathryn Kassner 4/21/2019 12:45 PMIt has been challenging checking in each day while traveling in New Zealand. I was often without internet access. I didn't have the time to really understand how it works. I didn't realize that you were to check in daily until now. I have been conscience of limiting my meat consumption which could have been a problem in many countries. New Zealand has many tasty vegetarian options.-
Paula Ward 4/21/2019 8:31 PMThat's awesome! I think you can use the calendar on your Ecochallenge Dashboard to go back and get credit (team points) for the days you ate vegetarian. Good luck!

REFLECTION QUESTIONFood Reduce Animal ProductsIn your opinion, what contributes to people in North America eating more meat than any other countries? What does this say about North American values and ways of living?
Kathryn Kassner 4/18/2019 1:45 AMNot sure why Americans eat more meat. In part it may be portion size. I recall European visitors being amazed at the size of steaks. I am currently traveling in New Zealand and they seem to eat a good deal of meat. I have managed to enjoy two meat free meals daily, but some times it can be a challenge. -
REFLECTION QUESTIONFood Keep Track of Wasted FoodAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Where would you rather use this money?
Kathryn Kassner 4/18/2019 1:42 AMI would rather use this money for travel or to help feed those in hunger. Restaurants in the US tend to serve to big of portions. I enjoy quality over quantity when it comes to food.
