In your opinion, what contributes to people in North America eating more meat than any other countries? What does this say about North American values and ways of living?

Agribusiness has hooked the public on fat/oil, sugar, and salt.  We've been trained that only foods loaded with them taste good.  S good we want more than we need to sustain ourselves.  Try cutting them out for 3 weeks and you'll see. Check out https://www.pcrm.org/

Name some of the human activities impacting the health of water systems, both locally (your watershed) and globally (freshwater and oceans). What can you do to improve the health of water systems?

Here in New Orleans we get our drinking water from the Mississippi River.  I'm never sure if I should fear what's being washed into our water during the uncontrolled spring flooding upstream, or the day-to-day fertilizer/pesticide runoff during the growing season.  Go organic!

Sometimes I wish I was still working in the NYC office.  I left for New Orleans before the Cinnamon Snail opened their vegan café in Penn Station. https://www.cinnamonsnail.com/home.html#!menu  (They catered our wedding breakfast, back when they were just a food truck.)

Watch your trash!!! While on a walk our pup picked up and swallowed a bone a construction worker left behind.  Uncomfortable couple of days, but she came through OK.  Be diligent in leave your worksite clean, especially if working in a neighborhood.

Ironically, this project is a Green project, improving stormwater retention to attenuate surges into our local system during heavy rains.

I'm celebrating 10 years vegetarian/5 years vegan in 2019.  No more 'creaks & groans' in the morning, I'm not on any meds (contrary to most my age) and my weight & BMI are spot on.  All started from implementing sustainable strategies into an airport terminal project, and finding how much resources meat-producing requires compared to veg and grains.

We gave away evergreen tree seedlings to all guests at our wedding.  Buying from the Arbor Day Foundation https://www.arborday.org/ we were able to tag the tree appropriate to the home climate for each guest (we had folks from across the US and Europe).  Plus now, after registering with the Foundation, when we get supplies or more plants from them they usually throw in an extra (we call it lagniappe here in Louisiana), so this weekend I planted a red maple and two forsythia bushes!
