Marybeth Cale 4/24/2019 5:14 AMWe joined a program that provides us with local, farm-fresh vegetables, meats, yogurt, and cheeses; our hope is that this decision will ultimately support farming and sustainable agriculture in our region, which is good for everyone. -
REFLECTION QUESTIONFoodIn your opinion, what contributes to people in North America eating more meat than any other countries? What does this say about North American values and ways of living?
Marybeth Cale 4/24/2019 5:12 AMI think that we live in a society that, unfortunately, hasn't been mindful of our footprint overall in the past - hopefully this is beginning to change with initiatives like ecochallenge. Our way of life has been centered around convenience and comfort - but I'm optimistic that the paradigm is beginning to shift to a values system that is more mindful of our collective responsibility to the world. -
REFLECTION QUESTIONFoodFun fact: Your brain and stomach register feelings of fullness after about 20 minutes of eating. While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come out of eating smaller portions?
