EcoChallenge Rhinebeck

I have really enjoyed being surrounded by nature! also I love to take bike rides as well!!!

Culinary Institute of America has some nice resources for eating sustainably including an infographic, alternatives to getting protein from large servings of meet, a toolkit, "What Builds Strong Evidence on Diet and Health?",  defining plant-forward diets, and more.

Prior to the challenge, I was serious about recycling and composting.  Now I am now much more focused on using resources more efficiently and producing less waste from the start.  Ms. Collins, thank you for bringing this challenge to the Rhinebeck community!

Women  even though they often produce more food than men are allocated fewer resources, land, and rights as men which can hurt their productivity. Support women farmers and the world will have more food to feed the starving.

Higher income areas and countries use more transportation. This is because people can afford cars and increased transportation to other places is a part of economic growth. We don't realize how privileged we are in Rhinebeck where we each drive our own cars to school each day. I once had a conversation with a girl from Ghana who found it crazy...
